Zucchini Brownies

From Jean Savage of Greenfield, Ohio

2 cups flour

1 1/2 cup sugar

1 teaspoon salt

1 teaspoon baking soda

1/2 cup cocoa powder

2 teaspoons vanilla

1/2 cup oil

2 cups peeled and grated zucchini

Mix all dry ingredients together and add the rest. Preheat oven to 350 degrees. Bake 25-30 minutes. (Nuts can also be added.)
